Fried baby potatoes with dill.

4th July, 2019
How basic and boring does this look? And you wouldn't even consider this as a delicious 'dish' right? I remember when my mum first made these for me and they soon became a favourite lunch idea, considering I'm a very picky eater. These can be an addition to any dish or meal, great replacement for chips or rice on the side of a meat roast, or simply consumed on it's own. My mummy tends to go for quick and ridiculously easy recipes such as soups or in this case 'fried new potatoes' on hot summer days as none of us in our house necessarily feel like eating much due to the heat, nor does she enjoy standing in the kitchen next to a boiling stove or oven, cooking for hours. And these - work perfectly for all of us.

How to make it?
All you need is few new potatoes, cut in half, unpeeled, cooked in salted water until tender, drain and transfer onto heated pan with a little melted batter. Fry occasionally gently stirring or tossing around until golden brown. Chop up ridiculous amount of fresh dill, as this incredible and refreshing herb is what really makes it. Transfer potatoes to a plate, add salt and pepper if you prefer, sprinkle or should I say COVER with dill, add a spoonful of soured cream on the side of the plate or in a separate small bowl to dip and enjoy.
